How did I get started with gingerbread anyway? When I came to work as the Sous Chef at the Heritage Club in Downtown Houston in 1991, the Chef said: "Thomas, you are from Austria, make a gingerbread house."


Never made one in my life, but after working until 3:00 am I left exhausted and proud. It looked pretty good, I thought. Found out the next day that it didn't make it through the night. Collapsed, I was told. The dough was too soft. Well, on to Plan B. My wife's grandma came to the rescue with her recipe, and here is the result. Small and hard as a rock.
